Ingredients
- 1 sweet potato, diced
- 1 tbsp curry powder
- 400g can chickpeas, drained
- 400g can Co-op chopped tomatoes
Method
- Preheat the oven to 190°C/fan 170°C/Gas 5
- Heat 2 tsp olive oil in a roasting dish and cook the sweet potato for 30 mins
- Meanwhile, heat 1 tsp olive oil in a saucepan, add the curry powder and stir
- Add the chickpeas and tomatoes
- Pour in a can of water and simmer for 10 mins
- Add the roasted sweet potato, season to taste, and cook for 10 more mins before serving
