  • 1 sweet potato, diced
  • 1 tbsp curry powder
  • 400g can chickpeas, drained
  • 400g can Co-op chopped tomatoes


  1. Preheat the oven to 190°C/fan 170°C/Gas 5
  2. Heat 2 tsp olive oil in a roasting dish and cook the sweet potato for 30 mins
  3. Meanwhile, heat 1 tsp olive oil in a saucepan, add the curry powder and stir
  4. Add the chickpeas and tomatoes
  5. Pour in a can of water and simmer for 10 mins
  6. Add the roasted sweet potato, season to taste, and cook for 10 more mins before serving
