  • For the salsa
  • 1 small mango, peeled and cubed
  • 1 red chilli, deseeded and chopped
  • Juice of 1 lime
  • 1 pointed red pepper or red pepper, deseeded and chopped
  • 1 small red onion, peeled and finely chopped
  • handful coriander, chopped (optional)
  • For the chicken
  • 4 Co-op chicken breast fillets
  • 120g fine breadcrumbs
  • 1 packet fajita seasoning
  • 2 tbsp flour
  • 2 eggs, beaten
  • 2 tbsp olive oil
  • To serve, rocket


  1. Mix all the salsa ingredients together and season with black pepper
  2. Cut into the side of the thickest part of each chicken breast until just past the middle, then open out
  3. Place between 2 pieces of cling film and bash with a rolling pin until about 1cm thick
  4. Mix the breadcrumbs with the fajita seasoning
  5. Put the flour on a plate, the beaten egg on another plate and the breadcrumbs on a third
  6. Coat each chicken piece in the flour, then the egg, then the breadcrumbs
  7. Heat the oil in a large non-stick frying pan and fry the chicken on both sides until cooked through
