  • 8 Co-op smoky black bean burgers
  • 325g can sweetcorn
  • 100g cherry tomatoes, finely chopped
  • 4 spring onions, finely chopped
  • 1 red chilli, deseeded and finely chopped
  • 1 tbsp Co-op olive oil
  • Juice of 1 lime
  • Handful coriander, chopped
  • 8 Co-op wholemeal rolls
  • Co-op British little gem, shredded
  • 100g Co-op Feta, chopped
  • 1 avocado, sliced


  1. Cook the black bean burgers according to the pack instructions
  2. Meanwhile, drain the sweetcorn and mix in a bowl with the cherry tomatoes, spring onions and chilli
  3. Add the olive oil and lime juice
  4. Toss with the coriander and season
  5. Load the rolls with the bean burgers, 2 tbsp salsa each and a handful little gem lettuce
  6. Divide the Feta and avocado between each bun
