Ingredients
- 2 x 400g cans Co-op chick peas, drained and rinsed
- 400g can Co-op Italian chopped tomatoes
- 2 tbsp Co-op extra virgin olive oil
- 2 tsp ground cumin
- 2 garlic cloves, crushed
- Zest and juice of ½ lemon
For the crackers
- 175g Co-op plain white flour, plus extra for dusting
- 1 tsp Fairtrade caster sugar
- 2 tsp dried mixed herbs
- 1 tbsp Co-op olive oil, plus extra for brushing
- 1 tbsp mixed seeds
Method
- Blitz the chick peas, tomatoes, oil, cumin, garlic and lemon juice into a houmous-like texture
- Season, scatter over the zest and chill until needed
- Preheat the oven to 200°C/fan 180°C/gas 6
- To make the crackers, combine the flour, sugar and herbs in a bowl
- Season, then make a well in the centre
- Mix the oil with 100ml cold water in a jug and pour into the well
- Combine with your hands to form a rough dough
- On a floured surface, roll into a rectangle about 35cm x 16cm, and 2mm thick
- Cut into 18 pieces, prick all over with a fork and place on a lined baking tray Brush with oil, season, sprinkle over the seeds, press them into the dough, and bake for 23-25 mins, until golden
- Allow to cool slightly, then serve with the houmous
