Tomato houmous with crackers


Put a twist on a classic houmous dip with added tinned tomatoes! It's a brilliant snack served with the herby crackers

  • 2 x 400g cans Co-op chick peas, drained and rinsed
  • 400g can Co-op Italian chopped tomatoes
  • 2 tbsp Co-op extra virgin olive oil
  • 2 tsp ground cumin
  • 2 garlic cloves, crushed
  • Zest and juice of ½ lemon

For the crackers

  • 175g Co-op plain white flour, plus extra for dusting
  • 1 tsp Fairtrade caster sugar
  • 2 tsp dried mixed herbs
  • 1 tbsp Co-op olive oil, plus extra for brushing
  • 1 tbsp mixed seeds


  1. Blitz the chick peas, tomatoes, oil, cumin, garlic and lemon juice into a houmous-like texture
  2. Season, scatter over the zest and chill until needed
  3. Preheat the oven to 200°C/fan 180°C/gas 6
  4. To make the crackers, combine the flour, sugar and herbs in a bowl
  5. Season, then make a well in the centre
  6. Mix the oil with 100ml cold water in a jug and pour into the well
  7. Combine with your hands to form a rough dough
  8. On a floured surface, roll into a rectangle about 35cm x 16cm, and 2mm thick
  9. Cut into 18 pieces, prick all over with a fork and place on a lined baking tray Brush with oil, season, sprinkle over the seeds, press them into the dough, and bake for 23-25 mins, until golden
  10. Allow to cool slightly, then serve with the houmous
