Okay, you’ve probably made tuna mayo a thousand times before, but here we’ve elevated it into an easy pack-ahead lunch, full of Mediterranean flavours

Big Bag Option


  • 250g dried penne or other short pasta shapes
  • 4 tbsp reduced fat mayonnaise
  • 1 tbsp Co-op balsamic vinegar of Modena
  • 70g Co-op sundried tomatoes, roughly chopped, plus 1 tbsp oil from the jar
  • 1 shallot, finely chopped
  • 70g Co-op pitted black hojiblanca olives, roughly chopped
  • 1 tbsp capers
  • 145g can Co-op tuna chunks in brine or oil, drained
  • 50g Co-op wild rocket


  1. Cook the pasta according to the pack instructions
  2. While the pasta is cooking, make the dressing
  3. In a large bowl mix together the mayonnaise, balsamic and oil from the sundried tomatoes, plus 2 tbsp of the pasta cooking water
  4. Season well to taste
  5. When the pasta is cooked, drain and refresh under cold water
  6. Transfer to the bowl with the dressing
  7. Add the shallot, olives, capers, sundried tomatoes, tuna and rocket
  8. Gently toss until everything is coated with the dressing
  9. Divide between serving plates and season with freshly ground black pepper to serve
