Ingredients
- 250g dried penne or other short pasta shapes
- 4 tbsp reduced fat mayonnaise
- 1 tbsp Co-op balsamic vinegar of Modena
- 70g Co-op sundried tomatoes, roughly chopped, plus 1 tbsp oil from the jar
- 1 shallot, finely chopped
- 70g Co-op pitted black hojiblanca olives, roughly chopped
- 1 tbsp capers
- 145g can Co-op tuna chunks in brine or oil, drained
- 50g Co-op wild rocket
Method
- Cook the pasta according to the pack instructions
- While the pasta is cooking, make the dressing
- In a large bowl mix together the mayonnaise, balsamic and oil from the sundried tomatoes, plus 2 tbsp of the pasta cooking water
- Season well to taste
- When the pasta is cooked, drain and refresh under cold water
- Transfer to the bowl with the dressing
- Add the shallot, olives, capers, sundried tomatoes, tuna and rocket
- Gently toss until everything is coated with the dressing
- Divide between serving plates and season with freshly ground black pepper to serve
