  • 1/4 tsp Co-op olive oil
  • 1/4 red onion, thinly sliced
  • 1/4 orange or yellow pepper, thinly sliced
  • 30g Co-op halloumi lighter, cut into 2 or 3 slices
  • 1 Co-op plain tortilla wrap
  • 2 tbsp Co-op reduced fat houmous
  • 60g Co-op Moroccan style cous cous
  • 1 tbsp chopped parsley
  • Handful Co-op mixed salad
  • 110g pack Co-op melon & grapes


  1. Put the olive oil in a large nonstick frying pan over a medium heat
  2. Cook the onion and peppers for 4-5 mins, until just tender, then
  3. tip into a bowl
  4. Wipe the pan clean, then put back over the heat
  5. Once hot, cook the halloumi for 1-2 mins each side, or until deep golden and set aside
  6. Take the frying pan off the heat, but while it's still hot, add the tortilla wrap and leave for 30 seconds to help it soften
  7. Take the wrap out of the pan and spread with the houmous, leaving a 2cm gap around the edge
  8. Spoon over the cous cous, followed by the onion and peppers, parsley and halloumi
  9. Fold two sides of the tortilla over the filling by a few centimetres,
  10. then roll up into a burrito shape
  11. Wrap tightly in foil, then allow to cool completely
  12. Pack with the mixed salad on the side, and the melon and grapes
