  • 60g Co-op unsalted butter
  • 2 Co-op British eggs
  • 2 tbsp Co-op semi-skimmed milk
  • 1 tsp vanilla extract
  • 4 tbsp caster sugar
  • 8 tbsp Co-op self raising flour
  • For the icing:
  • 4 tbsp low fat cream cheese
  • 2 tbsp icing sugar, sifted
  • 1/2 tsp rainbow sugar strands


  1. Put the butter in a microwaveable bowl and microwave for 20 seconds. Add the eggs, milk and vanilla and beat with a fork
  2. Add the sugar and flour and beat again
  3. Pour the mixture into two mugs
  4. Microwave for 2 mins 30 seconds (600W), 2 mins 15 seconds (800W) or 2 mins (1000W)
  5. Leave to cool
  6. For the icing, gently mix the cream cheese and icing sugar together until smooth and just combined
  7. Take care not to over mix, as it may become too runny
  8. Once the cakes have cooled, spoon the icing on top of each and decorate with the sugar strands
