Ingredients
- 60g Co-op unsalted butter
- 2 Co-op British eggs
- 2 tbsp Co-op semi-skimmed milk
- 1 tsp vanilla extract
- 4 tbsp caster sugar
- 8 tbsp Co-op self raising flour
- For the icing:
- 4 tbsp low fat cream cheese
- 2 tbsp icing sugar, sifted
- 1/2 tsp rainbow sugar strands
Method
- Put the butter in a microwaveable bowl and microwave for 20 seconds. Add the eggs, milk and vanilla and beat with a fork
- Add the sugar and flour and beat again
- Pour the mixture into two mugs
- Microwave for 2 mins 30 seconds (600W), 2 mins 15 seconds (800W) or 2 mins (1000W)
- Leave to cool
- For the icing, gently mix the cream cheese and icing sugar together until smooth and just combined
- Take care not to over mix, as it may become too runny
- Once the cakes have cooled, spoon the icing on top of each and decorate with the sugar strands
