Ingredients

  • 1 ½ tbsp Co-op sunflower oil
  • 1 red onion, finely chopped
  • 2 fat garlic cloves, grated
  • 1 tbsp smoked paprika
  • 3 tbsp Co-op tomato purée
  • 1 tbsp Co-op Fairtrade dark brown sugar
  • 2 tbsp maple syrup
  • 2 tsp English mustard
  • 2 x 400g cans Co-op cannellini beans, drained and rinsed

Method

  1. Heat the sunflower oil in a small saucepan over a medium heat
  2. Add the onion and cook gently for 7-10 mins. Add the garlic, paprika, tomato purée, sugar, mustard and 200ml water and stir everything together
  3. Tip in the drained beans, bring to the boil, then simmer and cook for 10-15 mins
  4. The liquid should reduce a little and become thicker, like a sauce. Season to taste
