Ingredients
- 1 tbsp Co-op olive oil
- 1 onion, chopped
- 1 Co-op British carrot, diced
- 2 cloves garlic, finely chopped
- 1 tsp paprika
- 1 tsp fennel seeds
- 1 tsp coriander seeds
- 1/2 red pepper, deseeded and diced
- 1 sweet potato, peeled and chopped
- 500ml vegetable stock
- 50g Co-op ready to eat dried apricots, quartered
- 1 tomato, quartered
- 100g Co-op cous cous
Method
- Heat the oil in a pan over a medium heat, then fry the onion, carrot and garlic for 5 mins until soft
- Add the paprika, fennel and coriander seeds, red pepper and sweet potato
- Stir, then cook for 2 mins more over a high heat
- Stir in the stock, add the apricots and tomato, then season to taste
- Simmer for 15 mins, or until the sweet potato is cooked
- Meanwhile, prepare the couscous according to the pack instructions, then serve with the tagine
