  • 1 tbsp Co-op olive oil
  • 1 onion, chopped
  • 1 Co-op British carrot, diced
  • 2 cloves garlic, finely chopped
  • 1 tsp paprika
  • 1 tsp fennel seeds
  • 1 tsp coriander seeds
  • 1/2 red pepper, deseeded and diced
  • 1 sweet potato, peeled and chopped
  • 500ml vegetable stock
  • 50g Co-op ready to eat dried apricots, quartered
  • 1 tomato, quartered
  • 100g Co-op cous cous


  1. Heat the oil in a pan over a medium heat, then fry the onion, carrot and garlic for 5 mins until soft
  2. Add the paprika, fennel and coriander seeds, red pepper and sweet potato
  3. Stir, then cook for 2 mins more over a high heat
  4. Stir in the stock, add the apricots and tomato, then season to taste
  5. Simmer for 15 mins, or until the sweet potato is cooked
  6. Meanwhile, prepare the couscous according to the pack instructions, then serve with the tagine
