
Veggie sloppy joes

Full of fiery Mexican flavour, this twist on the classic sloppy Joe is quick, easy and ideal for veggies

Ingredients
- 1 tbsp Co-op olive oil
- 1 onion, diced
- 1 orange pepper, deseeded and diced
- 1/2 tsp turmeric
- 1/2 tsp paprika
- 1/4 tsp chilli flakes
- 400g can cannellini beans, drained
- 400g can Co-op chopped tomatoes
- 1 tbsp fresh coriander, chopped (optional)
- 2 Co-op tiger rolls
- 1 lime, sliced into wedges
- 2 tbsp speedy guacamole
Method
- Heat the oil in a pan and fry the onion and pepper for 3-4 mins
- Stir in the spices and cook for a further minute
- Add the beans, tomatoes and 2 tbsp water
- Simmer for 12-15 mins, until the sauce is just starting to thicken
- Stir in the coriander, if using, slice the rolls in half and divide the mixture between the bases
- Add a dollop of guacamole, top with the lids and serve with the lime wedges
