An easy, impressive platter with a creamy Feta dip

  • For the veggies:
  • 2 tbsp Co-op olive oil
  • 2 courgettes, sliced on the diagonal
  • 200g Co-op Tenderstem broccoli
  • 125g baby corn, halved lengthways
  • 100g radishes, halved
  • 1 tsp dried thyme
  • Quater of a tsp of chilli flakes
  • For the whipped feta:
  • 200g Co-op Feta
  • 1 clove garlic, crushed
  • 200g Co-op 0% fat Greek style natural yogurt
  • 20g pine nuts, toasted


  1. Reserve a drizzle of oil to serve, then put the rest in a large bowl with the vegetables, thyme, chilli and seasoning, then toss to coat the veg
  2. Heat a griddle pan over a medium-high heat and griddle the vegetables in batches until they’re cooked through
  3. Set aside to cool
  4. Meanwhile, blitz the Feta, garlic and yogurt until creamy
  5. Season with black pepper, top with the nuts and reserved oil, then serve with the veg
