
Grilled feta with honey and thyme

Ingredients
- 200g Co-op feta
- 2 tsp Co-op olive oil
- 3 tbsp Co-op clear honey
- 2 tbsp sesame seeds
- Sprig of fresh thyme, or 1/4 tsp dried
- Sprig of fresh mint
- 120g bag Co-op babyleaf salad
- 1/2 cucumber, finely sliced
- 4 pitta breads, warmed and sliced
Method
- Put the feta in a heatproof dish and spread with the olive oil
- Grill for 5 mins until warm and starting to soften on top, then drizzle over 2 tbsp of the honey
- Scatter over the sesame seeds and the thyme leaves
- Grill for 5 mins more, then drizzle over another tbsp of honey with the mint, leaves finely chopped, if you like
- Mix the salad with the cucumber and serve with the feta and pitta breads
