  • 60g Co-op Greek Feta cheese
  • 60g Co-op light soft cheese
  • 2 tbsp Co-op Italian green pesto sauce
  • Juice of ½ lemon
  • 2 Co-op demi baguettes
  • ½ x 90g pack Co-op rocket salad
  • 100g leftover roast chicken
  • 2 Co-op chargrilled peppers, drained and sliced
  • ¼ cucumber, halved lengthways and sliced


  1. In a small bowl, mix the Feta, soft cheese, pesto and lemon juice until light and fluffy, then season well
  2. Cut the baguettes in half, then slice open
  3. Spread with the Feta mixture, then top with the rocket, chicken, peppers and cucumber
  4. Cut each baguette in half again to serve
