
Yogurt and lime cake

Ingredients
- 1 tsp Co-op unsalted butter
- 1 tbsp Co-op ginger preserve
- Zest of 1 lime
- Juice of 1/2 lime
- 1 Co-op British egg
- 20g Co-op unsalted butter, softened
- 40g Co-op natural yogurt
- 50g caster sugar
- 60g Co-op self raising flour
Method
- Preheat the oven to 190°C /fan 170°C /Gas 5
- Grease 2 x 150ml ramekins with butter
- Mix the ginger preserve with the lime juice and 1/2 lime zest, and divide between the ramekins
- In another bowl, put the egg, butter, yogurt, sugar, flour and the remaining lime zest, and whisk into a batter
- When the batter is smooth, divide between the ramekins
- Bake for 20 mins until risen and golden
- Carefully slide a knife around the edge of each ramekin and turn out onto plates
- Serve with a little extra yogurt on the side, if you like
