Ingredients

  • 1 tsp Co-op unsalted butter
  • 1 tbsp Co-op ginger preserve
  • Zest of 1 lime
  • Juice of 1/2 lime
  • 1 Co-op British egg
  • 20g Co-op unsalted butter, softened
  • 40g Co-op natural yogurt
  • 50g caster sugar
  • 60g Co-op self raising flour

Method

  1. Preheat the oven to 190°C /fan 170°C /Gas 5
  2. Grease 2 x 150ml ramekins with butter
  3. Mix the ginger preserve with the lime juice and 1/2 lime zest, and divide between the ramekins
  4. In another bowl, put the egg, butter, yogurt, sugar, flour and the remaining lime zest, and whisk into a batter
  5. When the batter is smooth, divide between the ramekins
  6. Bake for 20 mins until risen and golden
  7. Carefully slide a knife around the edge of each ramekin and turn out onto plates
  8. Serve with a little extra yogurt on the side, if you like
