This baked apricots dessert is a very quick and simple recipe that just uses storecupboard ingredients.

  • 2 x 410g cans apricot halves in juice, drained
  • 2 large Co-op British egg whites
  • 85g Fairtrade caster sugar
  • 85g Co-op ground almonds
  • 2 tsp almond extract
  • 15g Co-op flaked almonds, to decorate
  • Vanilla ice cream, to serve (optional)


  1. Preheat the oven to 180°C/fan 160°C/gas 4
  2. Lay the apricots flat side up in a single layer in an ovenproof dish
  3. Whisk the egg whites until stiff peaks form, then fold in the caster sugar, ground almonds and almond extract
  4. Place a heaped teaspoon of the mixture onto of each apricot
  5. Sprinkle over the flaked almonds and bake for 30-35 mins, until golden and firm to the touch
  6. Serve with vanilla ice cream, if you like
