
Braised sausage with lentils

Ingredients
- 1 tbsp olive oil
- 6 Co-op Truly Irresistible pork sausages
- 1 red onion, peeled and finely chopped
- 4 carrots, peeled and cut into small pieces
- 2 cloves garlic, peeled and finely chopped
- 200g Co-op green lentils
- 700ml vegetable stock (using 1 stock cube)
- Sprig fresh thyme (optional)
Method
- Heat the oil in a heavy-based casserole dish. Add the sausages and cook for a few minutes on each side until golden all over, then remove from the pan and put on a plate
- Add the red onion and carrot, and cook gently until just soft. Add the garlic and cook for a minute, then return the sausages to the pan with the lentils, stock and thyme, if using
- Cover with foil and a casserole lid, and simmer gently for 25 minutes or until the lentils and sausages are cooked
