Butter bean and tomato pâté

  • 2 tomatoes
  • 2 spring onions, roughly chopped
  • 1/2 x 400g can butter beans, drained and rinsed
  • 1 tbsp Co-op fat free Greek style yogurt


  1. Cut crosses into the bottoms of the tomatoes, place in boiling water for about 30 seconds, then immerse in cold water to loosen the skins
  2. Peel off and discard the skins, then add the flesh to a blender along with the spring onion
  3. Whizz briefly, then add the butter beans and yogurt and blend again until smooth
  4. Season to taste, spoon into a serving bowl and serve with sticks of red pepper, carrot and cucumber, if you like
