Ingredients

  • 150g Co-op fat free Greek style yogurt
  • Zest 1/2 lime, finely grated
  • 2-3 large carrots
  • 2 Co-op British eggs
  • 4 spring onions, trimmed and finely chopped
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1/2 tsp mild chilli powder
  • 2 tbsp Co-op self raising flour
  • 2 tbsp vegetable or sunflower oil

Method

  1. In a small bowl, mix the yogurt and the lime zest to make a dip, then chill in the fridge
  2. Coarsely grate the carrots and pat dry with kitchen paper
  3. Beat the eggs in a bowl
  4. Stir in the carrots, spring onions, coriander, cumin, chilli powder and self raising flour
  5. Heat the oil in a large nonstick frying pan
  6. Drop 4 heaped tablespoons of the mix into the pan and spread into rough circles
  7. Fry for 2-3 mins on each side until golden brown, adding more oil if needed
  8. Repeat with the rest of the mix
  9. Drain the fritters on kitchen paper
  10. Serve with the yogurt dip and 1 lime, cut into wedges, if you like
