Ingredients

  • 300g Co-op brown basmati rice
  • 1 tsp vegetable oil
  • 650g pack Co-op Honest Value mushrooms
  • 187ml bottle Co-op Chilean Sauvignon Blanc
  • 25g pack flat leaf parsley
  • 430g jar white sauce for lasagne

Method

  1. Cook 300g Co-op brown basmati rice according to the pack instructions
  2. Meanwhile, heat 1 tsp vegetable oil from your storecupboard in a large frying pan over a medium-high heat
  3. Slice a 650g pack Co-op Honest Value mushrooms* and fry for 10 mins, until golden
  4. Pour a 187ml bottle Co-op Chilean Sauvignon Blanc into the pan and cook for a further 3-4 mins, until reduced by half
  5. Finely chop a 25g pack flat leaf parsley, then add half to the pan, along with a 430g jar white sauce for lasagne
  6. Stir, then simmer for 5 mins, until piping hot
  7. Drain the cooked rice, then divide between four plates
  8. Top with the stroganoff and sprinkle with the remaining parsley to serve
