Ingredients

  • 240g tub Co-op mixed olive trio
  • 400g pack Co-op British diced beef casserole steak
  • 3 sprigs rosemary
  • 400g can Co-op Honest Value chopped tomatoes in tomato juice
  • 1kg Co-op Honest Value white potatoes
  • Splash of milk

Method

  1. Heat 1 tsp of the oil from a 240g tub Co-op mixed olive trio in a large saucepan over a medium-high heat
  2. Fry a 400g pack Co-op British diced beef casserole steak for 5-8 mins, until golden
  3. Drain off any excess fat
  4. Pick the leaves from 3 sprigs rosemary, chop two-thirds of them and add to the pan
  5. Mix in the olives and a 400g can Co-op Honest Value chopped tomatoes in tomato juice
  6. Half- cover with a lid, then simmer for 30 mins, stirring occasionally, until the beef is tender and season to taste Meanwhile, peel and quarter 1kg Co-op Honest Value white

  8. Cook the potatoes in a pan of boiling water for 15 mins, or until very soft
  9. Season well, then mash with a splash of milk from your fridge
  10. Serve the stew and mash garnished with the remaining rosemary leaves
