  • 700g Co-op baby potatoes, cut into 0.5cm slices
  • 2 tbsp Co-op olive oil
  • 2 garlic cloves
  • 1 lemon, zested then cut into wedges
  • 1 tbsp dried tarragon
  • 80g stale white bread
  • 25g pack flat leaf parsley
  • 4 Co-op British chicken breast fillets
  • 60g Co-op unsalted butter, at room temperature
  • 225g pack Co-op Irresistible Piccolo tomatoes
  • 350g Co-op frozen British garden peas


  1. Preheat the oven to 200°C/fan 180°C/gas 6
  2. Put the potatoes on a large baking tray, drizzle over the olive oil and toss until evenly coated
  3. Spread out in a single layer on the tray and bake for 20 mins
  4. While the potatoes are cooking, put the garlic, lemon zest, tarragon, bread and most of the parsley in a food processor
  5. Season, then blitz into coarse breadcrumbs
  6. Make three cuts into the top of each chicken breast, around a third of the way through, then spread the butter over
  7. Coat well with the breadcrumb mix, patting down gently with your hands
  8. Take the potatoes out of the oven and arrange the chicken and tomatoes on top
  9. Return to the oven for 25 mins, until the chicken has cooked through and the breadcrumbs are golden
  10. Meanwhile, cook the peas according to the pack instructions
  11. When the chicken is cooked, scatter over the reserved parsley and serve with the peas and lemon wedges on the side
