Ingredients
- 700g Co-op baby potatoes, cut into 0.5cm slices
- 2 tbsp Co-op olive oil
- 2 garlic cloves
- 1 lemon, zested then cut into wedges
- 1 tbsp dried tarragon
- 80g stale white bread
- 25g pack flat leaf parsley
- 4 Co-op British chicken breast fillets
- 60g Co-op unsalted butter, at room temperature
- 225g pack Co-op Irresistible Piccolo tomatoes
- 350g Co-op frozen British garden peas
Method
- Preheat the oven to 200°C/fan 180°C/gas 6
- Put the potatoes on a large baking tray, drizzle over the olive oil and toss until evenly coated
- Spread out in a single layer on the tray and bake for 20 mins
- While the potatoes are cooking, put the garlic, lemon zest, tarragon, bread and most of the parsley in a food processor
- Season, then blitz into coarse breadcrumbs
- Make three cuts into the top of each chicken breast, around a third of the way through, then spread the butter over
- Coat well with the breadcrumb mix, patting down gently with your hands
- Take the potatoes out of the oven and arrange the chicken and tomatoes on top
- Return to the oven for 25 mins, until the chicken has cooked through and the breadcrumbs are golden
- Meanwhile, cook the peas according to the pack instructions
- When the chicken is cooked, scatter over the reserved parsley and serve with the peas and lemon wedges on the side
