Try this incredibly easy one-pot for a spicy take on a vegetable stew

Ingredients
- 100g chorizo ring, or chopped bacon
- 1 large onion, peeled and finely chopped
- 2 cloves garlic, peeled and crushed
- 1 tsp (heaped) ground paprika, or a large pinch of cayenne for extra spice
- 400g tin butter beans, drained and rinsed
- 400g tin cannellini beans, drained and rinsed
- 400g tin chopped tomatoes
Method
- Peel the skin off the chorizo and chop into small pieces. Fry the chorizo and onion for 10 minutes
- Add the garlic and paprika and cook for a few minutes
- Add the beans, tomatoes and herbs, if using, and simmer for 15 minutes until the stew has thickened
- Serve with crusty bread or jacket potatoes
