Try this incredibly easy one-pot for a spicy take on a vegetable stew

  • 100g chorizo ring, or chopped bacon
  • 1 large onion, peeled and finely chopped
  • 2 cloves garlic, peeled and crushed
  • 1 tsp (heaped) ground paprika, or a large pinch of cayenne for extra spice
  • 400g tin butter beans, drained and rinsed
  • 400g tin cannellini beans, drained and rinsed
  • 400g tin chopped tomatoes


  1. Peel the skin off the chorizo and chop into small pieces. Fry the chorizo and onion for 10 minutes
  2. Add the garlic and paprika and cook for a few minutes
  3. Add the beans, tomatoes and herbs, if using, and simmer for 15 minutes until the stew has thickened
  4. Serve with crusty bread or jacket potatoes
