Ingredients
- 4 Co-op Scottish salmon fillets
- Zest of 2 limes
- Zest of 2 lemons and juice of 1
- 2 x 200g packs Co-op tenderstem broccoli
Method
- Preheat the oven to 190°C/fan 170°C/Gas 5
- Put the salmon in an ovenproof, non-metallic dish
- Mix the lime and lemon zest with 2 tsp lemon juice and 2 tsp olive oil, and season
- Spread over the salmon and leave to marinate in the fridge for no more than 15 mins
- Bake for 15 mins, until the fish flakes easily
- Meanwhile, add the broccoli to a pan of boiling water and simmer for 5 mins, until tender
- Drain and serve with the salmon
- Garnish with lime or lemon wedges, if you like.
