  • 4 Co-op Scottish salmon fillets
  • Zest of 2 limes
  • Zest of 2 lemons and juice of 1
  • 2 x 200g packs Co-op tenderstem broccoli


  1. Preheat the oven to 190°C/fan 170°C/Gas 5
  2. Put the salmon in an ovenproof, non-metallic dish
  3. Mix the lime and lemon zest with 2 tsp lemon juice and 2 tsp olive oil, and season
  4. Spread over the salmon and leave to marinate in the fridge for no more than 15 mins
  5. Bake for 15 mins, until the fish flakes easily
  6. Meanwhile, add the broccoli to a pan of boiling water and simmer for 5 mins, until tender
  7. Drain and serve with the salmon
  8. Garnish with lime or lemon wedges, if you like.
