Creamy salmon with prawns

  • 100g new potatoes
  • 2 salmon fillets
  • 1 clove garlic, peeled and crushed
  • 2 tbsp brandy or white wine
  • 100ml double cream
  • About 140g raw or cooked prawns
  • 100g green beans, trimmed


  1. Steam the new potatoes
  2. While they are cooking, pan fry the salmon, skin side upwards, until golden
  3. Turn the fillets, add the garlic and brandy and cook for a few more minutes
  4. Add the cream and bubble for a few minutes, until the fish is cooked through
  5. Add the prawns. (If they are raw, cook them until they are pink; if cooked, they just need to be heated through.)
  6. Season with freshly ground black pepper
  7. Steam the green beans and serve with the salmon and the new potatoes
