  • 1/2 tbsp Co-op olive oil
  • 1/2 onion, finely chopped
  • 1/2 clove garlic, finely chopped
  • 1 medium potato, peeled and chopped
  • 500ml vegetable stock
  • 80g bag watercress
  • Serve with 2 tsp crème fraîche
  • 2 tsp pesto and a pinch chilli flakes (optional)


  1. Heat the oil in a saucepan and gently fry the onion, garlic and potato for about 8 mins
  2. Add the stock and simmer for 15 mins or until the potatoes are cooked
  3. Add the watercress and blend until smooth
  4. Ladle into 2 bowls
  5. To serve, top each with crème fraiche, pesto and a pinch of chilli flakes, if you like
