Ingredients
- 1/2 tbsp Co-op olive oil
- 1/2 onion, finely chopped
- 1/2 clove garlic, finely chopped
- 1 medium potato, peeled and chopped
- 500ml vegetable stock
- 80g bag watercress
- Serve with 2 tsp crème fraîche
- 2 tsp pesto and a pinch chilli flakes (optional)
Method
- Heat the oil in a saucepan and gently fry the onion, garlic and potato for about 8 mins
- Add the stock and simmer for 15 mins or until the potatoes are cooked
- Add the watercress and blend until smooth
- Ladle into 2 bowls
- To serve, top each with crème fraiche, pesto and a pinch of chilli flakes, if you like
