Ingredients

  • 300g Co-op spaghetti
  • 150g Co-op frozen British garden peas
  • 100g pancetta or bacon, chopped
  • 1 tsp rapeseed oil
  • 2 garlic cloves, crushed
  • 2 Co-op British free range eggs, beaten
  • 100g Co-op light soft cheese
  • 150ml chicken stock, made with ½ reduced salt stock cube
  • 20g Co-op parmesan wedge, grated, plus extra to serve

Method

  1. Cook the spaghetti according to the pack instructions, adding the peas for the last 5 mins of cooking time
  2. Drain, reserving 100ml of the cooking water
  3. Cook the pancetta in the oil over a medium heat for 4 mins, turning regularly, until crisp
  4. Add the garlic and cook for a further minute, then set aside
  5. Add the eggs, soft cheese and chicken stock to a large jug or bowl and whisk together
  6. Season with black pepper, add the parmesan, then whisk again
  7. Over a low heat add the cooked spaghetti, the cheesy egg mixture and reserved pasta water to the pan, then gently mix for 2-3 mins until well combined and heated through
  8. Serve sprinkled with the extra parmesan and more black pepper
