Ingredients
- 300g Co-op spaghetti
- 150g Co-op frozen British garden peas
- 100g pancetta or bacon, chopped
- 1 tsp rapeseed oil
- 2 garlic cloves, crushed
- 2 Co-op British free range eggs, beaten
- 100g Co-op light soft cheese
- 150ml chicken stock, made with ½ reduced salt stock cube
- 20g Co-op parmesan wedge, grated, plus extra to serve
Method
- Cook the spaghetti according to the pack instructions, adding the peas for the last 5 mins of cooking time
- Drain, reserving 100ml of the cooking water
- Cook the pancetta in the oil over a medium heat for 4 mins, turning regularly, until crisp
- Add the garlic and cook for a further minute, then set aside
- Add the eggs, soft cheese and chicken stock to a large jug or bowl and whisk together
- Season with black pepper, add the parmesan, then whisk again
- Over a low heat add the cooked spaghetti, the cheesy egg mixture and reserved pasta water to the pan, then gently mix for 2-3 mins until well combined and heated through
- Serve sprinkled with the extra parmesan and more black pepper
