Ingredients
- 2 Co-op British free range eggs
- 1 tbsp rapeseed oil
- 2 x 250g packs Co-op microwave basmati rice
- 250ml chicken stock, made with ½ reduced salt stock cube
- 180g pack Co-op 2 smoked mackerel fillets in a piri piri marinade
- 1 tbsp curry powder
- 100g Co-op frozen British garden peas
- Greek style natural yogurt and chopped coriander, to serve (optional)
Method
- Fill a pan with water, bring to the boil, then reduce to a simmer
- Cook the eggs for 4-5 mins, until jammy inside
- Remove with a slotted spoon and place into a bowl of ice cold water
- Once cool enough to handle, peel the eggs, then cut in half
- While the eggs are cooking, put the oil in a large frying pan over a medium heat
- Add the rice and chicken stock and simmer for 2 mins, until starting to reduce
- Flake in the mackerel, cook for 2 mins, then add the curry powder and cook for a further minute
- Finally, add the peas along with 150ml of water, and cook for 3 mins
- Serve and eat immediately
