Ingredients

  • 8 Co-op soft pitted dates, chopped
  • 5 Co-op Royal Gala apples, peeled and cut into bite-sized chunks
  • 1/2 tsp vanilla extract
  • 1 tbsp Co-op cornflour
  • 175g Co-op ready rolled shortcrust pastry, cut into 2cm strips
  • 1 tbsp Co-op semi-skimmed milk
  • Co-op low fat natural yogurt, to serve

Method

  1. Preheat the oven to 200°C/ fan 180°C/gas 6
  2. Pour 125ml boiling water over the dates and leave to soak for 5 mins
  3. Put the apples in a microwaveable bowl, add 2 tbsp water and cover with a plate
  4. Microwave on high for 2 mins
  5. Stir, then repeat, checking after 1 minute if ready — they should be softened, but still retain their shape
  6. Blitz the dates along with their soaking water and the vanilla extract, until smooth
  7. Sprinkle the cornflour over the apples and mix, then tip into an ovenproof dish
  8. Spoon the date mixture over the top
  9. Arrange the pastry strips in a lattice over the dish, then brush them with milk
  10. Bake for 15 mins, until golden and serve with the yogurt
