  • 150ml elderflower cordial
  • 1 cinnamon stick
  • Pinch of mixed spice
  • 4 ripe Co-op pears, peeled but with the stem left in place
  • 120g Co-op reduced fat crème fraîche, to serve
  • Mint leaves, to garnish


  1. Put the cordial, cinnamon and mixed spice in a pan
  2. Pour over 250ml boiling water, stir, then add the pears
  3. Bring to the boil, reduce the heat to a simmer and cover
  4. Cook for 10 mins, then turn the pears and cook for 5 mins more
  5. Remove the pears from the pan, then increase the heat to high and bubble the remaining liquid until reduced by about half
  6. Discard the cinnamon stick
  7. Serve each pear with some of the cooking liquid, along with a dollop of crème fraîche and a few mint leaves
