Ingredients
- 5 tbsp Co-op plain flour
- 1 tbsp smoked paprika
- 3 tbsp sunflower oil
- 12 slices chorizo
- 4 Co-op cod fillets
- 4 Co-op Irresistible brioche burger buns
- 4 tbsp light mayonnaise
- 1 tsp chilli sauce
- 1/2 cucumber, peeled into ribbons
- 1 avocado, sliced
- Handful rocket leaves
Method
- Put the flour and paprika on a plate, season, then mix
- Heat the oil in a large frying pan and cook the chorizo slices for 1 minute, turning once
- Remove from the pan and set aside
- Coat the cod fillets in the spiced flour, then fry for 2 mins on each side until golden and crisp
- Remove from the pan and drain on kitchen paper
- Halve and toast the brioche buns
- Mix the mayonnaise with the chilli sauce, then spread on the bases of the buns
- To serve, fill the buns with the cod, topped with the cucumber, avocado, chorizo and rocket
