French toast with pears

  • 1 large Co-op British egg
  • 50ml Co-op semi-skimmed milk
  • 1/2 tsp vanilla extract
  • 2 thick slices Co-op white bread
  • 2 tsp Co-op unsalted butter
  • 200g Co-op low fat natural cottage cheese
  • 1 Co-op British pear, cored and sliced
  • 1 tsp Co-op clear honey
  • Cinnamon, for dusting (optional)


  1. In a large, wide dish, whisk the egg, milk and vanilla extract together
  2. Dip the bread into the mixture, then turn over and leave to soak for 1 minute
  3. Melt the butter in a large nonstick frying pan over a medium heat
  4. Fry the bread for 2-3 mins on each side until golden brown
  5. Put the toast on 2 plates and cut in half
  6. Divide the cottage cheese between the slices of toast, top with the sliced pear, drizzle over the honey and dust with a little cinnamon to serve, if you like
