Gammon and pineapple rice bowls


A speedy rice dish perfect for celebrating Chinese New Year

  • 1 tbsp Co-op olive oil
  • 200g Co-op British gammon steak
  • 100g Co-op frozen peas
  • 1/2 Co-op British leek, finely sliced
  • 100g broccoli florets
  • 250g pack Co-op microwave basmati rice
  • 1 tsp Chinese five spice
  • 227g can Co-op pineapple slices in juice, drained and chopped
  • Co-op light soy sauce (optional)


  1. Heat the oil in a pan and fry the gammon for 5 mins, turning halfway, until golden on both sides
  2. Remove, slice into strips, then return to the pan
  3. Add the peas, leek and broccoli and fry gently for 5 mins, until just tender
  4. Meanwhile, cook the rice according to the pack instructions
  5. Add the Chinese five spice to the pan and cook for 1 minute, then add the pineapple and fry for a few mins more
  6. Season to taste
  7. Add the rice, stir and divide between 2 bowls
  8. Serve with a dash of soy sauce, if you like
