Roasted pineapple with lime, chilli and honey

  • 425g can Co-op pineapple slices in juice, well drained
  • 1 lime, quartered
  • 10g Co-op unsalted butter, plus extra for greasing
  • 2 tbsp Co-op clear honey
  • 1/2 red chilli, deseeded and chopped
  • 2 tbsp Co-op fat free Greek style yogurt


  1. Preheat the oven to 190°C/fan 170°C/Gas 5
  2. Lay the pineapple slices and lime quarters on a greased baking tray, drizzle over the honey and dot the butter on top
  3. Scatter over the chilli and roast for 15 mins, turning once to make sure the pineapple is golden all over
  4. Squeeze the roasted lime over the pineapple slices and serve with a dollop of yogurt
