
Ginger beef stir fry

A speedy stir fry with British beef and warming ginger

Ingredients
- Zest of 1 orange and 4 tbsp juice
- 1 clove garlic, crushed
- 1 tsp ground ginger
- 1 tbsp Co-op light soy sauce
- 2 Co-op British beef sizzle steaks, thinly sliced
- 1 tsp cornflour
- 1 tbsp sunflower oil
- 320g pack Co-op Chinese stir fry vegetables
- 265g pack Co-op fresh egg noodles
Method
- Mix together the orange zest, garlic, ginger and half the soy sauce in a bowl
- Add the beef, stir to coat and leave to marinate for 5-10 mins
- In another bowl, mix together the orange juice, remaining soy sauce and the cornflour, then set aside
- Heat 1 tsp of the oil in a frying pan or wok, and stir fry the beef over a high heat for 3 mins, or until browned
- Tip into a clean bowl, along with the pan juices
- Wipe out the pan and heat the rest of the oil
- Stir fry the veg for 5 mins, then add the noodles and cook for 2-3 mins more
- Return the beef and juices to the pan, add the soy mixture then stir fry for 2-3 mins more, until the sauce thickens
