Ingredients
- 30g pine nuts
- 2 tbsp Co-op olive oil
- 1 clove garlic, grated
- Zest and juice of 1 lemon
- 1 tsp Co-op clear honey
- 2 Co-op little gem lettuces, halved lengthways
- 70g rocket
- 1 Co-op trimmed spring onion, thinly sliced
- 90g Co-op goat’s cheese
Method
- Dry fry the pine nuts in a pan until toasted, then remove and set aside
- In a bowl, whisk together the olive oil, garlic, lemon zest and juice, honey and a pinch of black pepper
- Put half the dressing in a large bowl and add the little gem halves
- Toss to coat, then heat a griddle or frying pan and cook them, cut-side down for 4 mins, until lightly charred
- Turn them over and cook for a further 2 mins
- Return the cooked lettuce to the mixing bowl and add the toasted pine nuts, rocket, sliced spring onion and the rest of the dressing
- Crumble over the goat’s cheese and toss to combine
- Divide the salad between serving plates
