Griddled little gem lettuce with goat's cheese

  • 30g pine nuts
  • 2 tbsp Co-op olive oil
  • 1 clove garlic, grated
  • Zest and juice of 1 lemon
  • 1 tsp Co-op clear honey
  • 2 Co-op little gem lettuces, halved lengthways
  • 70g rocket
  • 1 Co-op trimmed spring onion, thinly sliced
  • 90g Co-op goat’s cheese


  1. Dry fry the pine nuts in a pan until toasted, then remove and set aside
  2. In a bowl, whisk together the olive oil, garlic, lemon zest and juice, honey and a pinch of black pepper
  3. Put half the dressing in a large bowl and add the little gem halves
  4. Toss to coat, then heat a griddle or frying pan and cook them, cut-side down for 4 mins, until lightly charred
  5. Turn them over and cook for a further 2 mins
  6. Return the cooked lettuce to the mixing bowl and add the toasted pine nuts, rocket, sliced spring onion and the rest of the dressing
  7. Crumble over the goat’s cheese and toss to combine
  8. Divide the salad between serving plates
