Ingredients

  • 200g Haggis
  • 4 rashers Co-op streaky bacon
  • 50g Co-op Red Leicester
  • 4 slices of Co-op crusty bread

Method

  1. Slice the haggis into four rounds
  2. Fry with the bacon in a little olive oil, breaking the haggis up with a wooden spoon
  3. Grate the Red Leicester and butter the bread
  4. When the bacon and haggis are crispy, divide between two slices of bread, buttered side down, and sprinkle the cheese over the top
  5. Put the other slices on top, butter side up
  6. Fry for 3 mins on each side, pressing down with a spatula, until golden brown
