Ingredients
- 200g Haggis
- 4 rashers Co-op streaky bacon
- 50g Co-op Red Leicester
- 4 slices of Co-op crusty bread
Method
- Slice the haggis into four rounds
- Fry with the bacon in a little olive oil, breaking the haggis up with a wooden spoon
- Grate the Red Leicester and butter the bread
- When the bacon and haggis are crispy, divide between two slices of bread, buttered side down, and sprinkle the cheese over the top
- Put the other slices on top, butter side up
- Fry for 3 mins on each side, pressing down with a spatula, until golden brown
