Ingredients
- 150g Co-op British fresh broad beans
- 2 x 250g packs Co-op long grain rice
- Juice of 1/2 lime, plus 1 whole lime cut into 4 wedges
- 2 tbsp white wine vinegar
- 1 red chilli, finely chopped
- 2 tsp soy sauce
- 1 tbsp sesame oil
- 2cm ginger, finely grated
- 1 large carrot, cut into matchsticks
- 1/2 cucumber, peeled into ribbons
- 8 radishes, finely sliced
- 2 avocados, sliced
- 150g smoked salmon
- 4 spring onions, finely sliced
- 1 tbsp sesame seeds
Method
- Cook the broad beans in boiling water for 2 mins
- Drain, run under cold water and pop the beans from their shells
- Cook the rice according to the pack instructions, stir through the lime juice and 1 tbsp of the vinegar, then allow to cool
- Mix the chilli, soy sauce, sesame oil, ginger and remaining vinegar to make a dressing
- To serve, divide the rice between 4 bowls
- Top with the broad beans, carrot, cucumber, radishes, avocado and salmon
- Drizzle over the dressing, then top with the spring onion, sesame seeds and lime wedges
