
Herb crusted lamb steaks

Ingredients
- 2 Co-op British lamb leg steaks, fat trimmed
- 20g white breadcrumbs
- 1 tbsp flat leaf parsley, chopped
- 1 tsp dried rosemary
- 20g shelled pistachios, chopped
- 1 tbsp Co-op cranberry sauce
- 350g potatoes, peeled and diced into 2cm pieces
- 2 tbsp Co-op olive oil
- 150g Co-op British purple sprouting broccoli
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Put the lamb steaks on a baking tray lined with greaseproof paper
- Mix together the breadcrumbs, parsley, rosemary, pistachios and cranberry sauce
- Season then spread evenly on top of the lamb steaks and roast in the oven for 20 mins
- Meanwhile, bring a pan of water to the boil and cook the diced potatoes for 5 mins, drain well
- Heat the oil in a frying pan and add the potatoes
- Stir fry on a medium heat for 5 mins, until the pieces start to turn golden
- Add the broccoli and cook for a further 5 mins
- Serve the cooked lamb steaks with the crispy potatoes and broccoli on the side
