Smoky lamb steaks with veg


Pair delicious British lamb with seasonal veg for incredible flavour

  • 1 1/2 tbsp Co-op olive oil
  • 1 tsp smoked paprika
  • 2 Co-op British lamb leg steaks
  • 400g Co-op Jersey Royals, halved
  • Freshly ground black pepper
  • 4 spring onions, sliced into 3cm pieces
  • 2 x 100g packs Co-op British asparagus tips
  • 100g Co-op British sugar snap peas
  • 100g shelled Co-op British peas
  • For the dresssing:
  • 1 tbsp Co-op olive oil
  • 1 tbsp red wine vinegar
  • 1/2 clove garlic, finely chopped
  • 50g Co-op chargrilled peppers in oil, finely chopped
  • Handful fresh flat leaf parsley and handful fresh mint leaves, finely chopped (optional)


  1. Mix together 1 tbsp of the oil and the paprika
  2. Add the lamb, turn to coat, and set aside
  3. Put the Jersey Royals in a pan of boiling water, then simmer for about 15 mins, or until tender, drain and season with black pepper
  4. Fry the lamb in the rest of the oil over a medium heat for 3-4 mins on each side, then set aside to rest
  5. Add the spring onions, asparagus and sugar snaps to the pan
  6. Season with black pepper, turn up the heat and fry for 5 mins
  7. Boil the peas for a few mins until just cooked, then drain
  8. Mix together the dressing ingredients
  9. To serve, divide the veg between 2 plates, top with the lamb steaks and drizzle over the dressing
