
Smoky lamb steaks with veg

Ingredients
- 1 1/2 tbsp Co-op olive oil
- 1 tsp smoked paprika
- 2 Co-op British lamb leg steaks
- 400g Co-op Jersey Royals, halved
- Freshly ground black pepper
- 4 spring onions, sliced into 3cm pieces
- 2 x 100g packs Co-op British asparagus tips
- 100g Co-op British sugar snap peas
- 100g shelled Co-op British peas
- For the dresssing:
- 1 tbsp Co-op olive oil
- 1 tbsp red wine vinegar
- 1/2 clove garlic, finely chopped
- 50g Co-op chargrilled peppers in oil, finely chopped
- Handful fresh flat leaf parsley and handful fresh mint leaves, finely chopped (optional)
Method
- Mix together 1 tbsp of the oil and the paprika
- Add the lamb, turn to coat, and set aside
- Put the Jersey Royals in a pan of boiling water, then simmer for about 15 mins, or until tender, drain and season with black pepper
- Fry the lamb in the rest of the oil over a medium heat for 3-4 mins on each side, then set aside to rest
- Add the spring onions, asparagus and sugar snaps to the pan
- Season with black pepper, turn up the heat and fry for 5 mins
- Boil the peas for a few mins until just cooked, then drain
- Mix together the dressing ingredients
- To serve, divide the veg between 2 plates, top with the lamb steaks and drizzle over the dressing
