Ingredients

  • 250g Co-op British plums, stoned and roughly chopped
  • 15g caster sugar
  • 2 tsp red wine vinegar
  • 1 tbsp sweet chilli sauce
  • 250g new potatoes
  • 200g pack Co-op British purple sprouting broccoli
  • 1 spring onion, thinly sliced
  • 1 tbsp fresh mint, chopped, or 1 tsp dried
  • 2 tsp Co-op olive oil
  • 2 Co-op British lamb leg steaks, trimmed of fat

Method

  1. Put the plums, sugar, vinegar, chilli sauce and 2 tbsp water in a pan and simmer for 15–20 mins, stirring often, until the plums are soft
  2. Meanwhile, place the potatoes in a pan of boiling water and simmer for 15 mins, or until tender
  3. Add the broccoli for the last 5 mins, then drain
  4. Set the broccoli aside then, using a fork, roughly crush the potatoes with the spring onion, mint and oil
  5. Meanwhile, fry the steaks on a medium heat for 8 mins, turning every 2 mins
  6. Serve with the plum sauce, broccoli and mash
