
Hot smoked salmon with shredded cabbage and bacon

You only need five ingredients to make this speedy dinner with hot smoked salmon fillets and crispy shredded cabbage

Ingredients
- 2 Co-op Irresistible lightly smoked Scottish salmon fillets
- 1 onion, finely sliced
- ½ x 200g pack Co-op British smoked bacon lardons
- ½ white cabbage, finely shredded
- 3 tbsp Co-op reduced fat crème fraîche
Method
- Pat the salmon fillets dry with kitchen paper, then season
- Heat 1 tbsp Co-op vegetable oil in a frying pan and fry the onion and bacon lardons for 4-5 mins or until the onion starts to caramelise
- Add the cabbage and fry for another 5 mins, until starting to wilt but still with some crunch
- In another pan, heat 1 tbsp Co-op vegetable oil on a high heat and cook the salmon, skin-side down, for 3-4 mins, until the skin is crisp
- Flip over and cook for 4-5 mins
- Stir 1 tbsp Co-op reduced fat crème fraîche into the cooked cabbage mixture, then serve with the salmon, plus a spoonful of crème fraîche per person
