Ingredients

  • 2 Co-op Irresistible lightly smoked Scottish salmon fillets
  • 1 onion, finely sliced
  • ½ x 200g pack Co-op British smoked bacon lardons
  • ½ white cabbage, finely shredded
  • 3 tbsp Co-op reduced fat crème fraîche

Method

  1. Pat the salmon fillets dry with kitchen paper, then season
  2. Heat 1 tbsp Co-op vegetable oil in a frying pan and fry the onion and bacon lardons for 4-5 mins or until the onion starts to caramelise
  3. Add the cabbage and fry for another 5 mins, until starting to wilt but still with some crunch
  4. In another pan, heat 1 tbsp Co-op vegetable oil on a high heat and cook the salmon, skin-side down, for 3-4 mins, until the skin is crisp
  5. Flip over and cook for 4-5 mins
  6. Stir 1 tbsp Co-op reduced fat crème fraîche into the cooked cabbage mixture, then serve with the salmon, plus a spoonful of crème fraîche per person
