
Indian-style chicken tacos

Ingredients
- 8 Co-op mini wheat and white tortilla wraps
- 1 tbsp Co-op vegetable oil
- 1 red onion, thinly sliced
- 2 tsp cumin
- 1 tsp each garam masala, turmeric and chilli powder
- 520g pack Co-op British chicken thigh fillets, cut into strips
- 6 tbsp Co-op 0% fat Greek style natural yogurt
- 2 tbsp Co-op mango chutney
- ½ x 25g pack coriander, roughly chopped
- ½ x 200g pack Co-op radishes, thinly sliced
Method
- For the taco shells, preheat the oven to 190°C/fan 170°C /gas 5
- Using a rack over a deep baking tray, hang the wraps through the rack so they form a shell shape
- Bake for 12-15 mins, until crisp and golden
- Meanwhile, heat the oil in a large pan over a medium heat
- Cook the onion for 5-6 mins, until soft but not coloured, then stir in the spices and season
- Add the chicken and stir to coat, then cook for another 8-10 mins, until cooked through
- Mix the yogurt and mango chutney together, along with 1 tbsp of the coriander
- To serve, stuff the chicken mix into the shells, sprinkle over the radishes, drizzle over the yogurt mixture and finish with the remaining coriander
