Ingredients
- 280g Co-op wholegrain rice
- 1 tbsp Co-op olive oil
- 1 onion, finely diced
- 2 garlic cloves, crushed
- 2 thyme sprigs, leaves picked (or 1 tsp dried), plus extra to serve
- 1 tbsp jerk seasoning
- 2 x 160g packs Co-op cooked king prawns
- ½ x 400ml can light coconut milk
- 400g can Co-op red kidney beans, drained and rinsed
- 150g Co-op frozen peas
Method
- Cook the rice according to the pack instructions
- Meanwhile, heat the olive oil in a nonstick frying pan and cook the onion for 3-4 mins, until beginning to soften
- Add the garlic and thyme, then cook for another minute, until fragrant
- Massage the jerk seasoning into the prawns, then add to the pan and cook for 1-2 mins until lightly charred
- Stir the coconut milk, kidney beans and peas into the cooked rice, and heat gently until the peas are cooked
- This will take about 3 mins
- Serve the rice topped with the charred prawns and extra thyme
