Jerk-style prawns with rice and beans


Kidney beans and prawns make this easy rice dish high in protein

  • 280g Co-op wholegrain rice
  • 1 tbsp Co-op olive oil
  • 1 onion, finely diced
  • 2 garlic cloves, crushed
  • 2 thyme sprigs, leaves picked (or 1 tsp dried), plus extra to serve
  • 1 tbsp jerk seasoning
  • 2 x 160g packs Co-op cooked king prawns
  • ½ x 400ml can light coconut milk
  • 400g can Co-op red kidney beans, drained and rinsed
  • 150g Co-op frozen peas


  1. Cook the rice according to the pack instructions
  2. Meanwhile, heat the olive oil in a nonstick frying pan and cook the onion for 3-4 mins, until beginning to soften
  3. Add the garlic and thyme, then cook for another minute, until fragrant
  4. Massage the jerk seasoning into the prawns, then add to the pan and cook for 1-2 mins until lightly charred
  5. Stir the coconut milk, kidney beans and peas into the cooked rice, and heat gently until the peas are cooked
  6. This will take about 3 mins
  7. Serve the rice topped with the charred prawns and extra thyme
