  • 1 Co-op British parsnip
  • 4 Co-op British carrots
  • 1 tsp cumin seeds, crushed
  • 1/2 tsp ground coriander
  • 2 tsp Co-op clear honey
  • Co-op Irresistible Keralan chicken pizza
  • 2 radishes
  • 220g can butter beans, drained and rinsed
  • Handful baby spinach leaves
  • 11/2 tbsp Co-op olive oil
  • 2 tsp lemon juice
  • 2 tsp orange juice


  1. Preheat the oven to 220°C/fan 200°C/Gas 7 and line a baking tray with greaseproof paper
  2. Thinly slice the parsnip and cut the carrots lengthways into strips
  3. Mix with the cumin and coriander, drizzle over the honey and bake for 12 mins, or until just soft and turning golden around the edges
  4. Meanwhile, cook the pizza according to the pack instructions
  5. Thinly slice the radishes and mix with the butter beans and spinach
  6. Mix together the olive oil, lemon juice and orange juice and season to taste
  7. Add the parsnip and carrot slices to the salad and drizzle with the dressing
  8. Toss to coat and serve with the pizza
