
Lentil and sweet potato soup

Ingredients
- 100g Co-op dried red lentils
- 350g sweet potato, diced
- 1 Co-op British carrot, diced
- Zest and juice of 1 orange
- 800ml vegetable stock, made with 1 stock cube
- 1/2 tsp cumin seeds
- 30ml Co-op reduced fat crème fraîche
Method
- Rinse the lentils and put in a large pan with the sweet potato, carrot, orange zest and juice, and stock
- Bring to the boil, then simmer for 20 mins, stirring occasionally, until the veg and lentils are tender
- Blend, return to the pan and heat through
- Toast the cumin seeds in a dry pan for 1 minute
- Serve the soup topped with a dollop of crème fraîche and the toasted cumin seeds
