Ingredients

  • 1/2 butternut squash, peeled, seeds removed and cut into wedges
  • 1tbsp Co-op olive oil
  • 3 rashers Co-op streaky bacon, roughly chopped
  • 1 tbsp maple syrup
  • 20g pecan nuts, roughly chopped

Method

  1. Preheat the oven to 200C/fan 180C/Gas 6
  2. Put the butternut squash wedges on a baking tray, drizzle over a bit of olive oil and toss together
  3. Scatter over the bacon pieces and bake for 20 mins
  4. Drain off any excess oil and add the syrup and nuts
  5. Toss together and bake for 7-8 mins more, until the squash has caramelised and the pecans are toasted
