Ingredients
- 1/2 butternut squash, peeled, seeds removed and cut into wedges
- 1tbsp Co-op olive oil
- 3 rashers Co-op streaky bacon, roughly chopped
- 1 tbsp maple syrup
- 20g pecan nuts, roughly chopped
Method
- Preheat the oven to 200C/fan 180C/Gas 6
- Put the butternut squash wedges on a baking tray, drizzle over a bit of olive oil and toss together
- Scatter over the bacon pieces and bake for 20 mins
- Drain off any excess oil and add the syrup and nuts
- Toss together and bake for 7-8 mins more, until the squash has caramelised and the pecans are toasted
