Ingredients

  • 2 sweet potatoes, peeled and cut into chunks
  • 25g Co-op unsalted butter
  • 1/2 tsp ground cinnamon
  • 124g Co-op white marshmallows, sliced into discs

Method

  1. Boil the sweet potatoes in a large pan for 12 mins
  2. Drain, then empty into a warm ovenproof dish, leave to steam for a few mins, then add the butter and cinnamon
  3. Mash until smooth, top with the marshmallows, and grill for a couple of mins, until the marshmallows are just starting to toast
