Ingredients

  • 250g Co-op baby potatoes, sliced into 1cm discs
  • ½ x 160g pack Co-op British sliced curly kale
  • 2 tbsp maple syrup
  • 1 tbsp Co-op wholegrain mustard
  • 2 Co-op British Pork Chops

Method

  1. Preheat the oven to 180°C/fan 160°C/gas 4. Toss the baby potatoes in a baking tray with 1 tbsp Co-op olive oil* and season, then roast for 20 mins
  2. Add the curly kale and return to the oven for 15 mins
  3. Meanwhile, heat 1 tbsp more olive oil in a large pan over a high heat
  4. Mix the maple syrup with the wholegrain mustard and brush all over the pork chops, then lay them in the pan
  5. Cook for 6-7 mins, until golden and caramelised, then flip over and cook for another 4-5 mins, basting with a spoon, until cooked through — make sure the syrup doesn’t burn
  6. Rest the chops for 2 mins, then serve on top of the kale and potatoes, along with any pan juices
