Ingredients

  • 250g wholemeal flour
  • 250g Co-op plain white flour
  • 1/4 tsp baking powder
  • 1 tsp carom or caraway seeds
  • 1 tsp cumin seeds
  • 1 tsp crushed black pepper
  • 2 tbsp ghee or Co-op unsalted butter
  • 100ml Co-op pure vegetable oil
  • Chutney, to serve (optional)

Method

  1. Sieve both the flours and the baking powder into a large bowl
  2. Then add the carom and cumin seeds, and black pepper
  3. Add the ghee and 150ml water, then knead into a firm dough
  4. Tear off plum-sized pieces and roll into balls, then gently flatten with your hand to a thickness of about 5mm
  5. Alternatively, roll out all the dough on a floured surface to a thickness of 5mm, then cut out with a round biscuit cutter
  6. Heat the oil in a frying pan over a medium heat and fry the mathri, in batches if necessary, until golden
  7. Drain on kitchen paper and serve with a tangy chutney, such as mango, if you like
