Ingredients

  • 1 tbsp ghee or Co-op unsalted butter
  • 75g vermicelli rice noodles
  • 30g Co-op cashew nuts
  • 500ml Co-op whole milk
  • 225g sweetened condensed milk
  • 3 tsp sugar
  • 3 green cardamom pods, seeds removed and crushed
  • 30g raisins
  • Dried cranberries and chopped pistachios, to serve

Method

  1. Heat the ghee over a low heat in a medium saucepan and fry the vermicelli until golden
  2. Add the cashews and fry for another couple of minutes, until golden, then take the pan off the heat
  3. In a separate pan, bring the milk to the boil, then add the condensed milk, vermicelli, sugar and cardamom
  4. Cook for 3-4 mins, until the vermicelli are soft
  5. Stir in the raisins until warmed through, then serve garnished with the cranberries and pistachios
